In what files are the FMVs stored on the disc image? Looks like MAKUMA.AFS has all of the ones you care about (only took a quick glance). By the way, why would you want to subtitle any FMVs when you already have an English audio source? If anything, you'd want to mux the English audio from the PS2 version with the original Dreamcast FMVs (assuming this wasn't already done for the "legacy" English patch).
All of that said, I really don't think the PS2-sourced video is bad at all. Of course, it's your project though

the FMVs are in .bin, I renamed the extension to .sfd then used sofdecvideotools and it extracted just fine.

My drive, and nearly everyone else's, supports overburning. Don't worry I noticed, I tried my best to save more space and now it's 795 MBs, I do wanna know how you make a .CDI?
