I just got it today! I set it up straightaway.
For both example, video render settings are the following:
MP4 container, h.264 codec, 13 megabytes bitrate. 480p.
Heres a video with COMPOSITE. Recording with hauppauge hd pvr, at 50 hertz (25 fps).

Heres a video with component. As i said, setup is the following:
Dreamcast -> VGA box -> VGA to component converter -> HD PVR
Recording at 60 hertz, 29,9 period fps.

I have NO CLUE what those green squares are, so dont bother asking. Of course it has something to due with the converter..
Blue screen in the middle of the video is because i was switching resolutions on the converter. Was trying 720p for the heck of it, but of course, it gives a worse picture. So i went back to 480p. I know about the lack of brightness on the video. For some reason, its perfectly fine on my tv (btw i dont even see those green squares on my tv) so i guess my hd pvr doesnt like this converter. Personally i find a SLIGHT picture improve. Its hard to appreciate on this video, because like i just said, picture is different on the video than on my tv.. But i DO see a difference between VGA and component. Was it worth it? No, but im a nerd. So i had to try it out.
Bad picture on 720p is due only when switching. But when recording at 720p from the beginning, the quality is AMAZING.
