It looks like some of the newer Raspberry Pi's have built in wifi. However, unless I've missed something completely (which is quite possible) it doesn't look like we've got a tutorial up explaining how to go about setting up Dreampi like this, they all say to use a wifi Dongle.
Is it possible to setup Dreampi without a wifi dongle? And if so, is the procedure any different from doing it with a dongle?

Yes you can use the Pi 3's built-in Wi-Fi. Setup is exactly the same.
